Sometimes we need to deploy the organization-wide-default settings for the particular object. You can do that under Setup–>Sharing Settings–>Organization-Wide Defaults if you are having the system administrator access.

But if you want to deploy the changes using package.xml then retrieve the object metadata for which you want to change the owd then update the following tags:

Save the file and deploy the changes according to your requirements.
